Zucchini Rice



Zucchini Rice
1 1/2 cups uncooked rice
1 (15-ounce) can black beans, drained and rinsed
1 corn off the cob kernels
2 small zucchini, cone #2
2 tsp butter or earth balance
Juice of 1 lime and zest
1/4 cup chopped fresh cilantro leaves
salt and freshly ground black pepper, to taste
Instructions
In a large saucepan add water, cook rice with lid a ajar for first 8 min then put lid on and turn to low and cook until tender. Remove from heat and stir in black beans, corn, zucchini, butter, lime juice and cilantro. Cover and let stand 5 minutes.
Fluff rice with a fork; season with salt and pepper, to taste.
Serve immediately.

Raw Zucchini Noodles Salad



Raw Zucchini Noodles Salad
1 large zucchini cone #2
juice of 1 lemon and zest cone #1
4 tbsp. fresh basil
2-3 tbsp. extra virgin olive oil
pink himalayan salt and pepper
1 jar of sun dried tomatoes
Process veggies and toss and serve.

Peach Blueberry Oatmeal Crisp





Peach Blueberry oatmeal crisp
2 cups peaches or nectarines
2 cups blueberries
2 cups of almond milk
2 1/2 cups of granola gluten free
dash of cinnamon
½ cup oats gf


chop peaches into slices
in EOS, place fruit in bottom cover with granola, oats add almond milk  cinnamon. Start cooking at 350 degrees. Medium click low. serve with coconut icecream

Spaghetti Pomodaro Pie



Spaghetti Pomodaro Pie
1 ½ cup mushrooms  cone #4
fresh basil chopped
3 cloves garlic cone #1
1 large onion cone #2
2 cups of fresh tomatoes chopped or puréed
1 small package thin spaghetti gluten free
1 large can crushed tomatoes
1 can olives
2 yellow summer squash cone #4, #2
Salt and pepper
Instructions:  Layer in EOS

1 yellow squash #4
fresh tomatoes + salt and pepper
pasta
crushed tomatoes
1 yellow squash #2
Olives cone #4
brazil nut cheese
Start cooking at 350 degrees click turn down to low
Cook 30 min - top with fresh basil 
 





BRAZIL NUT PARMESAN CHEESE   
1 Cup Brazil Nuts
1 teaspoon chopped garlic
1/3 teaspoon Salt 
Blend in food processor
