Gourmet Cleansing of Asparagus
(and/or zucchini) Soup
4 Cups Boiling Water
1 Pound Asparagus and/or Zucchini cut in Lg pieces
1/2 Lemon, sliced with rind
1 Cup raw Cashews (or raw almonds, soaked overnight)
Pinch of Nutmeg

Celtic or Himalayan Salt and Cayenne Pepper to taste.
Add all ingredients to blender (you made need to do this in 2 batches). Blend about 2 minutes and enjoy!

Asparagus with a Zesty Dijon Sauce


Asparagus with a Zesty Dijon Sauce
Yield: Serves about 4
Ingredients:
12 ounces asparagus, stalky bottoms trimmed (look for medium-thickness spears)
 ½ lemon
 Salt
avo oil
 1 shallot, finely minced

Zesty Dijon Dressing (recipe below)
2 tablespoons slices almonds, for garnish
Cook the asparagus in a skillet with 2 T water- medium click low minimum moisture method.
-Place a large pan over medium-high heat, and drizzle in about 1 tablespoon of the oil; once hot, add in the shallot, and saute for about 30 seconds to 1 minute, then add in the Zesty Dijon Dressing to warm through; add in the asparagus and toss to coat in the warm dressing; add a pinch of salt/pepper, if needed.

-Serve with the sliced almonds sprinkled over top.
Zesty Dijon Sauce Ingredients:
¼ cup mayonnaise
1 clove garlic, minced
2 teaspoons Dijon mustard
 1 teaspoon maple syrup
¼ teaspoon ground cumin
¼ teaspoon, plus a pinch, salt
 Pinch black pepper
 Juice of 1 lemon

Cashew Dill Sauce

Cashew Dill SAuce
Ingredients
1 cup raw cashews, soaked (can use sunflower seeds instead)
½ cup water
¼ cup chopped fresh dill
¼ cup chopped sweet onion
2 cloves garlic
Juice of 1 lemon
1 teaspoon sea salt
Freshly ground black pepper

Instructions

In a high-speed blender combine the cashews, water, dill, onion, garlic, lemon juice, salt, and pepper to taste and blend until smooth.
Adjust the salt and black pepper to taste. Pour the cream into a small serving dish for dipping and set aside. Place in the refrigerator if you want a chilled dip.

 

Smashed Potatoes with Dill Sauce



Smashed Potatoes  with Dill Sauce
 8-10 red small potatoes
avocado oil
salt and  black pepper
In large 11 inch skillet place a damp paper towel, place potatoes on top. cook medium click low
until tender 20-30 mins.
Smash the potatoes with a glass or spatula
preheat skillet add a small amount of oil add in smashed potatoes and cook until golden 8 mins. turn over and sear the other side. season with salt and pepper. Serve with Dill sauce
