Raw Waldorf Salad


                                           
6 large or 8 medium celery stalks cone #2
2 cup soaked Almonds
11/2 cup soaked (around 5 hours) and Sunflower Seeds
4 green onions, chopped finely
4 large Granny Smith apples cone #2
1/4 cup finely chopped celery leaves
½ Red cabbage sliced thinly with cone #4

Dressing
2 tablespoons Dijon-style mustard
1 garlic clove, crushed
Juice from 1 lemon & zest
2 teaspoons honey or maple syrup
1/2 teaspoon coarse sea salt or kosher salt
5 tablespoons extra-virgin olive oil
black pepper
1/2 tea dill dried or 1/8 cup finely chopped fresh dill
1/4 cup parsley, chopped finely
1/4-1/2 teaspoon dulse

Pulse Nuts and seeds in food processor, cut the celery, apples with sm machine.
In a salad bowl, combine the lemon juice, mustard, garlic, honey, herbs, and salt. Whisk in the oil and season with pepper. Add the nuts, seeds, apples, celery & leaves, onion- toss and Serve on purple cabbage bed.
