Watermelon & Basil Salad with creamy Miso dressing

Watermelon is full of antioxidants shown to reduce the inflammation that contributes to diabetes, asthma, atherosclerosis, colon cancer, and arthritis. Watermelon has the highest level of lycopene found in fruits and vegetables. Studies have linked lycopene consumption with a reduced risk of prostate and oral cancers.

2 cups fresh watermelon, cubed or cone #3
1 cup fresh basil, chiffinode
1 cup of mint chiffinode
spices: cayenne, black pepper
optional: watercress,onion, olives
 
Dressing:
2 Tbsp white miso paste
1/3 cup lemon juice
1 Tbsp seasoned rice vinegar
1-2 Tbsp olive oil
Sea salt to taste
garnish: basil leaves, olive oil drizzle over top, pepper

Directions:
Toss dressing with your diced watermelon cubes and chopped basil. Add optional spices like nori seaweed flakes. Top with pepper and optional drizzle of olive oil. Garnish with fresh basil.
