Sweet Potato Kale Bake



Ingredients
1 ¾ cup broth
1 cup Quinoa
2 sweet yams cut into thick slices
1 cup mushrooms sliced cone #4
1cup kale
1 onion cone#2
Lemon zest
chopped green onions
2 Tbsp sliced almonds
pepper & salt to taste
2 Tbsp vegan chipotle sauce (recipe below)
Directions
Layer in the bottom of the eos ,oil sweet potato, quinoa, Onion, Mushrooms,Broth,Kale
Start at medium heat cook until clicking occurs turn down to low – 25 mins

Top with chipotle dressing and serve

Dressing
3 Tbsp vegan mayo (Vegenaise)
a few dashes chipotle powder
1 tsp maple or agave syrup
Juice from1 lemon
(thin out with a splash of liquid if desired - water, vinegar, oil works)
