Zest and juice of 1 orange (about 1 tablespoon zest, 1/2 cup juice)

¼ extra virgin olive oil

Himalayan salt and pepper to taste
In a large bowl, whisk together the orange zest and
juice, cumin, vinegar, olive oil. Shred all the veggies with cone #2 and add to
the bowl. Dress and serve.
