Watermelon Pizza




Ingredients:
1 vanilla cashew cream recipe
1 round watermelon slice (about 1.5  inch thick) seedless preferably
Toppings: choose any toppings
1/4 cup raw shredded coconut
Blueberries
Pomegranate seeds
Raspberries
Kiwi, peeled and sliced
Peaches sliced
Dried raisins or currants
Toasted walnuts, pecans or almonds chopped
Hemp seeds
Mint leaves

Directions:
Slice watermelon 1.5” thick or 1 “ with rind on – place on a cutting board
Spread on cashew cream
Top with whatever topping you desire, slice and serve.

Vanilla Cashew Cream
1 cup organic raw cashews soaked for 2 hours 
1/4-1/2 cup filtered water depending on desired thickness
1-2 Tbsp maple syrup, or more to taste or use 1-3 whole medjool dates
1/2 tsp natural vanilla extract, or a little more to taste
a pinch of sea salt
Throw everything into the blender and puree until thick and creamy.
It is a good idea to start with ¼ cup of water, and then gradually thin it out in order to achieve the desired thickness.
