Southwestern Stuffed Peppers with  Quinoa, Beans and Green Chiles
Ingredients:
6 large bell peppers
1 1/2 cup cooked quinoa
1/2 onion, chopped
1 cup black beans
1 cup Pinto beans
1 can (4 oz.) diced green chiles with juice (Anaheim chiles, not Jalapenos)
1 tsp. ground cumin
1 tsp chili powder
rock salt
1 cup + grated cheese (I used vegan Daiya cheese)
1 can enchilada sauce 0r make your own
Directions:
Chop onion with cone #2, mix all ingredients in a bowl, cut bell peppers in half, stuff with mixture. place peppers in a skillet or roaster. Pour enchilada sauce over the top of peppers. cook medium click low- 35 mins until peppers are tender. serve with fresh cilantro.
