Orange Ginger  Endive Salad
Dressing:
1 tablespoon Dijon mustard
1 clove garlic, minced
4 tablespoons olive oil
1-2 grinds black pepper
Lemon juice from 1 lemon
1 T apple vinegar
Salad ingredients
1 large carrot cone #2
1 head endive
2 apple cone #4
1  blood orange diced
3- 4radishes, thinly sliced cone #4
1 large cucumber cone #2 or 3
3 tablespoon of pickled ginger; finely sliced
Handful of toasted walnuts, roughly chopped
Handful of mint or cilantro; finely chopped.


Instructions
In a small bowl add the garlic and mustard. Slowly drizzle the oil into the mustard mix while stirring to emulsify. Add the pepper and stir to combine. Set aside.
Chop veggies, toss with dressing and serve with chopped herbs and walnuts.
