Basil Leek Fresh Corn Quick Risotto
serves 4
2 cups basmati rice
4 cups broth
2 Tablespoons  Butter – earth balance
2 cups sweet corn kernels (about 3 small ears worth)
2 large leeks, white and light green parts only, sliced in half then into thin half moons
2 cloves garlic, minced
salt and pepper
1/4 cup Nutritional yeast
 3 T Fresh basil or dried
In Electric oil core skillet place all ingredients except basil and butter. Set the Eos to Rice 1
After the rice is cooked, stir in fresh basil and butter.
