Enchilada Pasta Skillet
Ingredients
1 medium onion, chopped cone #2
2 cloves minced garlic
2 yellow squash cone #3
1 bell pepper cone #3
1 package veggie meat 1 packet taco seasoning
2 cups broth
1 can (19 oz.) red enchilada sauce
2 1/2 cups dried rotini pasta or gluten free
2 cups shredded cheese daiya brand or Heidi ho
chopped cilantro
Directions:
In Electric skillet Add in the squash, pepper, onions & garlic Add in veggie meat  add in the taco seasoning, Pour in pasta, broth, enchilada sauce, trying to make sure all the pasta is covered. Start at 350 degrees Cover and cook for approximately 25 minutes. Sprinkle on 1 cup of cheese place lid on and let cook additional 10 mins. until melted. Top with cilantro & serve.
