Heirloom Tomato & Watermelon Salad with Corn Vinaigrette
Serves: 4
 A fresh summer salad using heirloom tomatoes, cubed watermelon, fresh parsley, lime, olive oil, dressed with a unique sweet corn salad dressing.
Ingredients
4 cups watermelon, cubed
3-4 large heirloom tomatoes (about 3 cups), cubed
1 ear fresh corn kernels
extra sea salt to garnish
1 avocado, diced for garnish
Fresh basil- chiffinode 

DRESSING:
1 ear fresh corn kernels
1/2 cup water
¼ cup extra virgin olive oil
4 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon pink sea salt
juice of 1 lemon and zest
fresh black pepper
Instructions
In a large mixing bowl, combine all cubed tomatoes, watermelon, basil  and adjust seasonings to taste (sea salt and black pepper).
DRESSING: Blend all ingredients in a blender.
