Quinoa Veggie Soup



Quinoa  Veggie Soup
Ingredients
1 package frozen corn
1 cup grated squash cone #3
1 cup grated zucchini cone #3
1 cup grates carrots cone #3
1 cup quinoa
6-7 cups vegetable broth (add more if soup is too thick)
1 small cauliflower cone #3
1 onion cone #2
3 stalks celery cone #3
1 can diced tomatoes
1 can of coconut milk

2 bay leaves
1 teaspoon cumin
1 T. smoked paprika
1 teasp chili
salt, black pepper
juice from one lemon
Cut vegetables into small pieces with saladmaster machine
Instructions
In 7 qt . Add vegetables and spices and cook for 5 minutes. Add quinoa broth and coconut milk and cook for 20 minutes until cauliflower becomes soft. Season with salt, pepper and lemon juice.
