Gazpacho



Gazpacho
              (cold veggie soup)

2 cups  tomato juice (best from fresh tomatoes)
2 cups diced tomatoes
2 cups diced cucumbers
1 red onion, diced
2 cups fresh spinach or other leafy green
1cup fresh (or frozen) corn

1 cup olives
1 bunch fresh cilantro or basil
2 tsp vinegar
2 cloves garlic, crushed
salt & pepper to taste
Blend all ingredients in blender just a few seconds (this can be done in batches). Can be garnished with diced avocado and served with warm corn tortillas.
