Pumpkin Pepper Cheesy Rice
Ingredients
2 poblano peppers chopped
1 medium yellow onion,
cone #2
2 cups pumpkin or kabocha
cut with cone #3
2 bouillon cubes
1 cup long grain white
basmati rice
2 cups water
8 ounces vegan cheese
(optional)
3 scallions, thinly sliced
1 tablespoon minced fresh
cilantro, optional instructions
In the Mp5 add the
following:
Onions, rice, pumpkin,
peppers, water, bouillon.
Set the Mp5 to Rice 2 , after cooking rice stir
in cheese and scallions.
