Spicy and Sweet Tex-mex salad
1 head lettuce, chopped 
1/2 head cabbage chopped cone #4
2 cups cooked back beans beans
3 ears fresh corn cut off cob 
1 cup diced mango, papaya or pineapple cone #3
1 cup diced tomatoes
1 small red onion, diced cone #3
3/4 cup sliced black olives cone #4
1 Avocado diced
Top with chili cashew sour cream and cilantro. Optional : Serve with tortilla chips



Cashew Sour Cream
1 cup raw cashews
1/2 cup water
Juice and zest of 1-2 lemons
1 tsp apple cider vinegar
1/2 to 1 tsp salt.
chili sauce/ hot sauce optional. Blend all ingredients in high-speed blender
until smooth and creamy… this may take awhile. Chill.
