Spiced Cranberry Nog

Makes 3 cups

 

1½ C fresh cranberries

2 C oat milk (vanilla soymilk, soymilk eggnog or almond milk)

1/4 C maple syrup, plus more as desired

1 tsp vanilla extract

1½ tsp ground cinnamon

1/2 teaspoon ground cardamom

1/4 tsp. ground nutmeg

1/8 tsp. ground cloves

1/8 tsp. ground allspice

pinch of sea salt

optional: dash of Grand Marnier

 

Rinse the cranberries in a strainer under running water and place them in the blender.Place all ingredients in the blender. Blend on high speed until the cranberries are completely broken down and the nog becomes creamy and thick, about 1 minute. Taste and season with more maple syrup and or/GrandMarnier if desired.(Note: If using a milk that is pre-sweetened, add a squeeze of lemon juice). There may still be tiny flecks of cranberries even after blending thoroughly. Pour the nog into a pitcher and chill until ready to serve. Or serve warm. 

 

*Cranberries are rich in citric, malic, quinic and other acids. They also contain flavonoids, anthocyanins, ellagic acid, and vitamin C. Because of their tannin content, the berries possess a natural astringency. Recipe by Sara & Mary
