
Ingredients
Peach Filling
7–8 ripe peaches (halved, pits removed and chopped)
1 TBSP lemon juice
1 TBSP maple syrup (optional)
Crumble
1 cup gluten-free old-fashioned rolled oats
1/4 oat flour
4 T vegan butter
1/2 cup almond meal
1/2 cup roughly chopped pecans
1/3 cup pure maple syrup or date sugar
1/4 cup favorite granola
1 T cinnamon
1.5 cups non dairy milk
Instructions
Preheat the eos to 350°
Add sliced peaches directly to the eos and flatten to form an even layer.
Add all crumble ingredients to a large mixing bowl and using your hands or a wooden spoon, mix until all everything is evenly distributed.
Add the crumble to the top of the fruit in an even layer. Pour milk over top
Bake for 35 minutes, or until the crumb topping is crisp and slightly browned.
Allow the crisp to cool for 10-15 to firm up, then serve warm as is or with your favorite dairy-free ice cream.
