You will need these vegetables:
1 1/2 cups chopped onions cone #2
3 garlic cloves minced
2 cup of chopped celery
1 cup of chopped carrots cone #4
1 1/2 cups chopped mushrooms cone #3
1 cup sliced assorted peppers diced
1 lb spinach
2 cups canned diced tomatoes
lemon zest for garnish
These condiments, spices and lentils:
3tbs olive oil
1 1/2 tbs cider vinegar
2 tsp paprika
1 1/2 tsp cumin
2 tsp fennel seeds
2 cups lentils
1 1/2 cups vegetable stock
2 tsp salt, 1 tsp ground pepper
1/4 tsp cayenne.
Heat 3 tbs oil on medium and add onions, cook until softened (slightly golden) about 3-5 min
add garlic, carrots , peppers, celery and continue to cook for about 5 minutes or until the vegetables are tender. Add spices, canned tomatoes, vegetable stock, salt, ground and cayenne pepper.
Bring to high simmer with lid off, then place lid on after 5 mins, medium, click, low cook until lentils and tender and most liquid is absorbed. about 20 min and spinach and cook till the spinach is wilted. Stir in the lemon zest.
Serve with polenta..
