3 cups cooked quinoa ( 1 ½
cup quinoa seeds to 3 cups water)
¼ cup scallions, sliced
thin

full of Mint chopped
1 granny smith apple, cone

½ cup dried raisins or
other dried fruit
1 cup greens kale or other
greens chiffinode
¼ cup almonds chopped or
soaked
Dressing:
1/2 tsp. sea salt
4 Tablespoons miso paste
10 tbsp. hot water
4 tsp. sesame oil
1 tsp. very finely grated
fresh ginger
1 tbsp. maple syrup
Juice of 1 lemon
¼ cup extra virgin olive
oil
Sea salt, black pepper to
taste
In a small mixing bowl or
blender, whisk together the miso hot water, lemon juice, olive oil, Season to
taste with salt and pepper. Combine cooked quinoa with apples, almonds,
scallions and dried fruit.
About 30 minutes before serving drizzle with ½ cup
prepared vinaigrette and toss to combine. Serve cold or at room temperature.
