1/2 Package Veggie Pepperoni ( optional) or sausage tempeh
1 Cup White Mushrooms cone #4
1 Small Can Black Olives sliced cone #4
1/2 Green Bell Pepper thinly sliced
1 bottle Italian spaghetti or pizza sauce
1 container hummus
1 Cup Daiya Mozzarella Cheese or other (shredded)
Dried Oregano, Red Pepper Flakes, Garlic Powder
1 package tortillas – brown rice or flour
Saute veggies (mushroom, peppers) in 11 inch skillet with
small amount of broth or oil.
Preheat EOS to 350 degrees
Spread a tortilla with 2 to 3 tablespoons of hummus add
another tortilla on top, Top quesadilla with pizza sauce, sautéed vegetables,
pepperoni and cheese. Place in EOS spray
and cook until toasted and melted cheese. Then top with Red Pepper Flakes and oregano and garlic
powder.
