Romanesco Salad



1 head romanesco broccoli cut with cone #3
1 Large Apple, cut cone #3
1/2 Red Onion, sliced thin cone #2
1 Fuyu persimmons cut cone #2
1 pomegranate –
2/3 cup dried cranberries
1/3 cup toasted slivered almonds



Caesar Dressing - Plus
1 Cup raw cashews
1/2- 1cup to 1 cup water (depending on thickness desired)
Juice and zest of 1-2 lemons
1 Tbs. Dijon mustard
1 Clove garlic
Pinch of salt (optional)
1 strip of nori seaweed (optional)
Fresh ground black pepper

Blend all ingredients in blender until smooth and creamy.
Will thicken over night in fridge. Add water if needed. Note- This dressing can (without the nori seaweed) make a nice mayo substitute, or added to sauteed onions and mushrooms can be made into a thick sauce or add almond milk to desired thickness for gravy.
