Beet Cabbage Salad and Mustard Dressing
1 small head red cabbage  Cone #4
1 large beet shredded cone #2
1 green apple cone #2
¼  pumpkin seeds
Fresh lentil sprouts or other sprouts
Dressing
4-5 tablespoons raw cider vinegar or lemon juice
2 tablespoons maple syrup
¼ cup extra virgin olive oil
1 teaspoon Dijon mustard
Freshly ground black pepper and Sea Salt
Directions
Shred cabbage and apple  and beet.
To make the dressing, whisk the vinegar, syrup, oil and mustard together. Season well with black pepper, pour over the shredded vegetables and toss well.
Mix all together and serve
