BBQ Cauliflower Pizza
1 -Pizza Dough- frozen of
homemade
Toppings:
1 large head cauliflower, cut into florets
1-2 tablespoons oil
Sea salt and pepper, to taste
1 cup of your favorite bbq sauce
½ cup pizza sauce
8 ounces cheese, shredded
4 green onions, chopped
1/3 cup cilantro, chopped
DIRECTIONS
While the dough is rising or unthawing, preheat the
oven or EOS to 425 degrees F. Place the cauliflower on a baking sheet and toss
with avocado oil, salt and pepper. Roast in the oven for 20 minutes or until
just beginning to char. By now the cauliflower should be done roasting. Add the
cauliflower to a bowl and toss with 1/2 cup bbq sauce. Roll the dough out until
you have a flattened disk. Place the pizzas in a sprayed electric skillet
pushing around the dough so all sides are covered with dough. Add pizza sauce
and remaining bbq sauce. Add the cauliflower Top with the cheese. Bake the pizzas at 425 degrees F for 25-30
minutes or until the cheese is all melty and gooey and crust is crisp. Remove
from the skillet and top with green onions and cilantro.
