Holiday Salad
Serves: 4-6
Ingredients
1 raw sweet yam cone #2
2 cups of thinly
sliced brussels sprout or cabbage or both cone#4
1/2 purple onion
cone #2
½ cup dried
cranberries
¼ cup of pine
nuts, lightly toasted
Dressing:
1 orange,
juice+zest cone #1
1 lime, juice
1 tbsp maple
syrup
2- 4 tbsp tahini
2 T miso
4 tbsp olive oil
salt, pepper
Instructions
Slice brussels
sprouts cone #4 and process all veggies. Add everything to a large bowl with
pine nuts. Prepare dressing. Mix together juice of lime, orange and, orange
zest, tahini, miso ,maple syrup, olive oil, salt and pepper. Blend in
blender. Pour over the salad and mix well together. Sprinkle with cranberries
