Nectarine Hummus Pizza with Walnuts and Arugula
with a balsamic
reduction

pizza crust

nectarines sliced

½ cups of favorite hummus
¼
cup chopped walnuts
½
cup vegan cheese of choice
2
cups arugula tossed with 1 T olive oil
Use
any crust you like- spread hummus on top
Layer
on all the ingredients.
Start
cooking at 320 in electric oil core skillet.
Click and down to
low. Takes 20- 30 mins
Balsamic
Reduction
Ingredients
1 cup of good quality balsamic vinegar
Instructions
Pour balsamic vinegar into a small saucepan. Turn heat to
medium high and bring vinegar to a boil. Once boiling, reduce to simmer and let
simmer for about 10 minutes until vinegar has reduced down. Stir occasionally.
{be sure to keep an eye on it because it can burn quickly} You will know it is
done if it coats the back of spoon. Remove from heat.
