Beet, Cabbage, Date Salad with Sumac Dressing
2 raw red beets, grated on cone #2
2 cups red cabbage, grated on cone #2
1/3 cup Medjool dates, pitted and chopped
1 bunch parsley and/or mint, finely chopped

 


Sumac Dressing

1/2 cup extra virgin olive oil
1/4 cup freshly squeezed lemon juice
1 teaspoon (maple syrup)
2 teaspoons sumac
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon ground black pepper
Instructions
Add everything to a small mixing bowl, and whisk until combined. You can also add everything to a mason jar, screw on the lid, and shake to combine.
