Creamy EOS Augratin Potatoes
1 leek chopped
5 red or gold medium potatoes cone #4
3/4 cup cashews soaked in water
2 tablespoons Tahini
1 cup veggie broth or water with 1 teaspoon miso
Dashed with powered ginger & paprika
Salt & pepper to taste
Topped with Vio Life Parmesan & cheddar
Preheat EOS to 325
In a Vitamix or food processor add cashews, liquid, tahini & seasonings. Blend until creamy.
Brown leeks in EOS.
On
cone # 4 slice & layer potatoes over the bed of leeks and pour a
layer of sauce. Add a second layer of sliced potatoes and layer with
another layer of sauce. Top with Vio life cheddar and Parmesan with cone
#1.
Cook medium click low until potatoes are tender.
About 14-17 min. Top with fresh chopped herbs
