Potato Latkes with Ginger Cranberry Applesauce

Vegan Potato Latkes
Makes 8-10 small Latkes
1. 5 cups yukon gold potato packed in, grated (cone 3), rinsed and drained.
1/2 cup garnet yam
⅓ cup unbleached all purpose flour. I used tapioca flour to make gluten free
3 tbsp sliced green onion - approximately 3 green onions
3 tbsp unsweetened non dairy milk
1 tbsp cornstarch
1 ¼ tsp salt
½ tsp baking powder
black pepper, to taste
oil, for frying (avocado oil, or coconut work well)
optional: 2 tablespoon fresh, chopped dill
optional: ¼ cup vegan cheese shreds
Optional: grated zucchini or carrot or any veggie you desire
Instructions
-Grate potatoes and massage in warm water then squeeze out as much moisture as you can using a paper towel or ring out in a clean dish towel.
-Combine 2 cups potatoes, flour, green onion, almond milk, cornstarch, salt, baking powder, and black pepper (optional: add dill and vegan cheese.) Mix well to help with binding.
-In the 12"EOS or 12" gourmet skillet preheat a generous amount of avocado or coconut oil over medium heat.
-Spoon ¼ cup of potato mixture into the pan. Use a spatula or pancake flipper to flatten the patty to about ¼" thick. Fry until golden brown, flip, and fry the other side. Drain excess oil on a paper towel if necessary.
-Serve with your favorite toppings (we used apple sauce and vegan sour cream.  Also good sliced green onion, tzatziki, and black pepper.)
I use yukon gold because it has less starch than russet and cooks about the same speed as the garnet yam

Ginger Cranberry Applesauce
Ingredients:
4 - 5 large baking apples- Cone #2
1 Tablespoon fresh ginger  (about an inch) - Cone #1
1.5 - 2 cups raw cranberries
juice of one lemon
cinnamon, to taste or cook with a cinnamon stick
Directions:
- Using the Saladmaster Machine, cut apples and ginger directly into the roaster. Add the lemon juice and a cinnamon stick or sprinkle with cinnamon, to taste, if desired.  
- Cover and place the roaster on medium heat. When Vapo-Valve™ clicks, reduce to low and cook for approximately 15 - 20 minutes.
- Apples are ready when tender enough to mash with a fork. Mash to desired texture.
- Let cool. Refrigerate. Enjoy! - Or eat warm with Latkes and vegan sour cream
