Fig Apricot Apple Crumble

4 sweet apples, chopped cone #3
10-12 whole figs, chopped in wedges

½ cup diced Apricots dried
4Tbsp. maple syrup
¼ almond milk
2 Tsp. cinnamon
1 Tsp. vanilla
2 cup vanilla granola

¼ cup gluten free flour

 

Directions:

Preheat the EOS to 350 degrees.
Combine the maple syrup, cinnamon, and vanilla in a bowl.
Chop the apples and figs. Mix the apples and figs into the gooey mixture and coat evenly.
Pour mixture into the skillet, Sprinkle with gf flour, granola and almond milk  on top.
Cover and cook for 30minutes. (Check it at 30 minutes — if the apples and figs are soft, it’s done!) Serve the hot crumble with coconut ice cream!
