Sesame Chocolate Chip Bliss
Ingredients
generous ½ cup tahini
¼ cup pure date paste or maple syrup
1 ¼ cup whole oats
2 TBSP ground flaxseed
2 TBSP chia seeds
1/3 cup dark chocolate chips
Instructions
In a large mixing bowl, add the tahini, maple syrup,
oats, ground flaxseed, and chia seeds.
Mix everything until the ingredients are well-combined.
If the mixture is too dry and crumbly, add more tahini and/or maple syrup. If
the mixture is too sticky or wet, add a bit more oats or ground flaxseed.
Transfer the bowl to the refrigerator for 5 to 15 minutes
to slightly chill and firm up.
Remove the bowl from the refrigerator and scoop the dough
into ~1 tablespoon increments with a cookie dough scoop. Roll the dough into
balls with your hands. The dough should make about 14-16 balls. If the mixture
sticks to your hands, try slightly wetting them with filtered water before
rolling.
Enjoy the balls immediately! Store the leftover balls in
an airtight container in the refrigerator for up to 2 weeks.
