Shaved summer Salad

4 cups pounds assorted zucchini and yellow squash cone #4

Thinly sliced tomatoes- cherry tomatoes

1 bunch red radishes cone #4

or watermelon daikon

Radish sprouts are a nice addition

Basil & Mint torn into pieces

Beans- white (2 cups)


Dressing:

1 garlic clove, minced

1 T maple syrup or balsamic

Zest of 1 lemon and 1/4 cup lemon juice

2 T apple cider vinegar

1 1/2 t salt Fresh cracked pepper

3T olive oil


After sprinkle on:

1 handful of toasted Nuts grated cone #1

Or vegan cheese


Instructions 

Step 1 Use cone #4 slice the zucchini, squash, radishes into coins. Place on oval baking dish or deep dish griddle.   

Step 2 Make the dressing by blending together the garlic, lemon juice and vinegar. Season with salt and pepper.  

Step 3 Drizzle dressing over vegetables Sprinkle lemon zest, basil, mint nuts over the top of the salad.


Serve on a layer of white beans
