Cauliflower
and Leek Soup
Ingredients
1 large cauliflower head cone #3
1 leek, chopped
1 onion, chopped cone #2
2 garlic cloves
3-4 cups veggie stock
1 tsp oil
Salt and pepper, to taste
3/4 cup cashew nuts to 1 ½ cup water soaking
Croutons or toasted bread, optional
Instructions
Cook cauliflower in 5 qt or 7 qt until soft medium click low(about 25 minutes).
In a skillet saute onions, garlic and leek until soft
with small amount of oil.
Blend all together and season to taste.
