Pineapple and Chikn Coconut Rice




Ingredients
1 package Gardein Chikn Strips – ( VEGAN) or tempeh
1 1/2 cups white basmati rice
2 cups vegetable
1 can coconut milk
1 cup cubed or crushed pineapple
 2 tablespoons soy sauce (plus more for drizzling)
2 tablespoon sesame oil
1/4 cup finely chopped scallions
Optional toppings: almonds, toasted coconut flakes, red pepper flakes
Directions
In EOS add chikn, rice, broth and pineapple, coconut milk. Start EOS at 350 degrees cook until clicking occurs then turn down to low. Let cook for 20 minutes.  Add soy sauce and sesame oil-Top with chopped scallions and any of the other recommended toppings. Drizzle a touch more soy sauce, if desired.
