Purple Slaw
Slaw PurpleINGREDIENTS – Serves 2
¼ cup Walnut Pieces
2 cups red cabbage, finely shredded cone #4
1 fennel bulb, finely shredded cone#2
1 fuji apple, cone #3
1/4 small red onion, finely cone #2
¼ cup parsley, chopped
¼ cup olive oil
2 tbsp cider vinegar
Salt & Pepper
METHOD
Preheat a skillet
Place the walnuts in pan and roast for 6-8 minutes, set aside to cool.
Meanwhile, mix together the cabbage, fennel, apple, onion and parsley in a large bowl.
Add dressing season well and stir into the slaw. Stir in the walnuts, reserving a few to scatter over the top.
