Turkish Style Lentil Meatballs 

 Ingredients
1 cup red lentils
2.5 cups water
1 cup fine bulgur
1 large onion cone #2
1 teaspoon olive oil
1 tablespoon tomato paste
1 tablespoon pepper paste
5-6 sprigs of spring onion (parsley + spring onion)
1 teaspoon cumin
1 teaspoon red pepper flakes
1 teaspoon black pepper
1 teaspoon salt (adjust to taste)
Juice of 1 lemon
For serving: Lettuce
 
 Instructions
  1. Boil the lentils:
Boil the lentils in 2.5 cups of water. The lentils will soften and become slightly mushy.
  1. Add the bulgur:
Remove the pot from the heat.
Pour 1 cup of bulgur into the hot lentils.
Cover and let it rest for 20 minutes. The bulgur will swell with the warmth of the lentils.
  1. Prepare the onion sauce:
Pour olive oil into a pan.
Fry the diced onion.
When the onion softens, add the tomato and pepper paste and sauté until fragrant.
Add the spices and stir.
  1. Mix into the mixture:
Pour the onion sauce into the lentil-bulgur mixture.
Knead well.
Add lemon juice, chopped parsley, and spring onion.
Knead a little more.
  1. Shape:
Wet your hands lightly and shape into classic meatballs.
  1. Serving:
Serve on lettuce.
