INGREDIENTS:
5 yukon gold or russet potatoes
1 beet
3 Tb "butter – earth balance
3/4 cup nut milk or soy milk unsweetened
Sea salt and pepper to taste
PREPARATION:
Cook potatoes and beets separately in 3 qt and 5 qt
Mash potatoes with other ingredients
Then puree beets in Vitamix and fold into potatoes.
