Cabbage, Radish, Cauliflower, Fennel Salad


Salad
½ head green cabbage
¼ cup fresh parsley
1 bunch radishes
1 small head of cauliflower
1 fennel bulb
Handful fresh chives
Vinaigrette
1 tablespoon red wine vinegar
2 tsp Dijon mustard
1 T maple syrup
1/3 cup olive oil
Finely minced fennel fronds
1 lemon juiced & zest
Sea salt
Freshly ground black pepper
Chop cauliflower with cone #3. Drain and rinse the beans. Chop fennel bulb and radishes with cone #4 or. Mince the chives and parsley. Combine cauliflower, beans, fennel, chives, parsley, in a large bowl and toss with vinaigrette.
