5  yukon gold and/or russet potatoes, peeled or un-peeled, diced
 1 beet, diced
 3 Tb "butter” – earth balance
3/4 cup nut milk or soy milk unsweetened
1 heaping Tablespoon Miso


Sea salt and pepper to taste
PREPARATION:
Cook potatoes and beets separately in water ‘til tender
Mash potatoes with other ingredients
Then puree beets in Vitamix and fold into potatoes.
