Ingredients
Green Cabbage- thinly sliced cone #4
1 English cucumber, thinly sliced cone #4
1/2 cantaloupe, seeded, cone #3
Dressing
2 tbsp. tamari or soy sauce
Juice from 1 lime juice
¼ cup olive oil
Seasoned rice vinegar
1 tsp. minced peeled fresh ginger
1 small red or green jalapeno, halved lengthwise, seeded
and thinly sliced - optional
1/4 c. fresh mint leaves
Instructions
Whisk together soy sauce, lime juice, oil and ginger in a
small bowl.
In a large bowl, combine jalapeno, mint leaves, cucumber,
cabbage and cantaloupe. Add dressing and stir to coat.
