Thai Broccoli Salad
Ingredients
1 pound broccoli cone #2
1 large carrot cone #2
1 large red bell pepper cone #3
1/2 cup spring onions thinly sliced
small handful cilantro chopped
Dressing:
1 stalk lemon grass cone #1
1 teaspoon garlic minced cone #1
1 cup cashews roughly chopped
2-3 tablespoons toasted sesame oil
1 lemon juiced
1-2
T Key lime avo oil or lime zest
2 tablespoons almond butter can also use
peanut butter
2 tablespoons coconut aminos or tamari
1 tablespoon maple syrup
Wee bit of water
Instructions
Rice Broccoli cone 2 or 3
chop the broccoli with cone #2 or cone #3 for
bigger riced size.
Toss
Salad with dressing and serve with
cashew nuts chopped
Add
the carrots, red pepper, spring onions, cilantro and cashews to the salad bowl
and toss to combine.
