Chopped Mexican Salad

Ingredients: 
1 pkg of sweet frozen corn
1 can of black olives- sliced on cone #4
½ red cabbage chopped with cone #3 or 4
2 carrots cone #2
1 bunch of fresh cilantro chopped
1/2 lb of cheddar cheese (cone #1) or 1 pkg of daiya vegan cheese
Chopped spring onions – 3-4 sliced
2 cans of kidney beans
1 tomato chopped
1 8-10 oz jar of salsa (hot or mild- your choiceJ)
1 avocado chopped- optional
½ cup of dairy free ranch dressing

Directions:
Process all veggies and toss all ingredients together & serve- serve with corn tortillas chips

Dairy Free Ranch
Ingredients
    1/4 cup nondairy milk or water
    1/2 cup vegan mayonnaise  (veganaise)
    1 cup soy yogurt
    2 teaspoon onion powder
    2 teaspoon garlic powder
    2-3 tablespoons red wine vinegar or white wine
    1 tablespoon dried or fresh parsley, finely chopped
    salt and pepper, to taste
Maybe a little chipotle powder
