Watermelon, Zucchini Veggie Salad
2 carrots cut with cone #2
2 zucchini cut with cone #2
1/4 of a red cabbage with cone #4
1/2 green pepper
4 cups watermelon cubed
Handful of roasted sunflower seeds
Dressing:
Olive oil & lemon Juice, Dijon mustard, salt & pepper.
To make:
Chop the carrots, zucchini, cabbage with saladmaster machine and pepper into long thin slivers.
Be sure to scrape the watermelon right off the rind and include some of the green portion as well- thats where all the good stuff is, nutritionally. Cut watermelon into cubes.
Combine all the ingredients ---YUM!
