Creamy Cilantro Lime Coleslaw
IngredientsFor the Slaw
5 cups shredded green cabbage cone #4
1 carrot cone #2
3 green onions, sliced
1 jalapeƱo, seeded and minced or pickled
1 cup jicama cone #3
1 cup canned black beans
1 cup cubed fresh pineapple cone #3
1/4 cup chopped cilantro
Juice of 1 lime
Pinch salt
Olive oil
For the Slaw Dressing
1/4 oil, 1 lemon juiced. 2T.
1/2 cup veganaise mayo or replace cashew dressing
Zest and juice of 1 lime (you want about 2 tablespoons of lime juice)
Salt and pepper to taste
Instructions
To Make the Slaw Dressings
In a small bowl, whisk the oil and lemon juice, mayonnaise, lime zest and juice and season with salt and ground black pepper. Set aside.
Place the slaw ingredients in a large bowl. Pour the slaw dressing and toss to combine. Adjust seasoning. Cover and chill for at least 20 minutes.
